This honey frozen yogurt bark is the perfect light and refreshing dessert especially for Rosh Hashanah. It comes together in no time and is a great option to make with your kids – they can choose their own toppings and just have fun with adding things to the yogurt bark. It is also low in sugar and high in protein.  Its main ingredients are three of my favorite foods: greek yogurt, honey and peanut butter!

This Frozen yogurt honey bark recipe is customizable

  • For a dairy-free version use full-fat unsweetened soy or coconut yogurt.
  • Use any toppings of your choice: various nuts or dried fruit, jams, fresh fruit, nut butter, melted chocolate, mini marshmallows, or cupcake sprinkles for a birthday version.
  • Add lemon zest, orange zest, peppermint extract or almond extract to the yogurt for extra flavor.

Description

This honey frozen yogurt bark is the perfect light and refreshing dessert especially for Rosh Hashanah. It is also low in sugar and high in protein.  Its main ingredients are three of my favorite foods: greek yogurt, honey and peanut butter!


  • 2 cups (570g) plain Greek yogurt

  • 3 tablespoons honey

  • 2 teaspoons vanilla extract

  • 2 tablespoons natural peanut butter

  • 2 tablespoons strawberry jam, warmed

  • 1 cup (125g) fresh strawberries, sliced

  • ¼ cup (30g) pistachios, roughly chopped (or other nuts of choice)


 

  1. In a medium mixing bowl, combine Greek yogurt, honey, and vanilla extract. Stir until smooth.

  2. Line a rimmed baking sheet with a piece of parchment paper and spread the yogurt mixture on top.

  3. Dollop the peanut butter and jam onto the yogurt and swirl using a toothpick. 

  4. Sprinkle on the toppings.

  5. Transfer the yogurt bark to the freezer for 2-3 hours or until set. Slice or break into 10 pieces and serve immediately (with napkins to clean up sticky hands!). 

  6. Keep leftovers in the freezer.
